I'm glad you mentioned BBQ. This may start a war, but all these trips to SC have exposed me to some offerings there. I am not a fan of vinegar based sauces.
Vinegar is good for marinading, not for sticking to meat at the later stages (or after) of the cooking process.

Vinegar-based grew on me. My local place in eastern Carolina was vinegar based, so it was all I had convenient access to, so I learned to love it over time.

Man, fucking Austin. They didn't have the best BBQ in the state, but they had the largest concentration of good-enough-to-eat BBQ in the state for a metropolitan city. Now there won't be a damn thing left of any value inside the city limits.
