So... just stick it in a pan, and dont bother tossing it. It'll turn out perfect. turn it once.

Or, oven 350 for 30 minutes, on a rack, no effort. Perfection.

I like the idea of that big pot because then, if working on a bigger recipe, you can use that fat for something else.

But yes, the oven is usually the way.
