I've been experimenting lately with a lot of recipes I never tried before. I made this the other night.... it was fucking incredible.

My only change was.... instead of making the beans from scratch, I used 4 small cans of pre-cooked red beans. I drained them first, and started from there with the 6 cups of water, etc. Let simmer for about an hour, add the meat, let simmer another 30.
Fuck, it was good. Made the rice separately and put them in a bowl together. Seriously, fuck.

What's the size of the can of beans you're using? I picked up a couple 16-oz ones.

I could only find the smaller, regular sized cans, when I shopped. I used four. 2 of the big cans would be fine. Are the smaller ones 16oz? Don't have one in front of me.

Red Beans and Rice
My mom sends out a daily email of just whatever is on her mind. Yesterday she sent her recipe. Please excuse typos: she's 80.
Red Beans and Rice
One pound of Camellia Small Red Bean
2 cups of rice
Beans use a heavy pot with lid............I use a large magnilite pot.
pour the dry beans in a bowl to rinse with HOT water. Pout that water off and cover bean with Hot water. Set aside.
Put the pot on the stove and turn the heat to medium high. I use bacon end. Brown the bacon ends and pieces. Use the grease and maybe add some more bacon fat. Add about a tablespoon of sugar to the browning bacon. Stir when you need to.
Chop a small onion and add to the bacon. About a half cup chopped onion.
Chop a few toes of garlic and add to bacon. You need to stir the mixture to keep from burning. You may need to turn down the heat.
Add salt and pepper. (A little red pepper and some black pepper) Continue browning ingredients. When the Bacon is mostly cooked, pour the beans and water into the pot. if you have some coffee in the coffee pot pour about a half cup of coffee in your beans. If you have no coffee, don't worry about it. Cover the bean and heat to boiling. Stir the pot really good and cover. Cook until boiling. Turn down heat. Continue to simmer for about 2 hours. You have to sample to test for doneness.
Rice
If you have a rice cooker, use it. I like to cook my rice on the stove top.
The ratio for rice is 2 cups water to 1 cup rice. A cup of rice is probably enough for 4 people. Today I cooked 1 1/2 cups of rice and had a good bit left over.
I do not use our tap water for rice. If I had to, I could, but would need to add about a teaspoon of white vinegar.
⦁ To cook the rice, put the water in a pot. Turn the burner on high and bring water to a boil. Add salt and a tsp of Butter. When the water is boiling, add your rice. Stir the rice. Bring to a boil. Stir one more time. Cover the pot. Lower the heat to low. Cook for 23 minutes. Do not remove lid or stir while rice is cooking.
