Do you think in most American casual dining places they're called "Starters" or "Appies" because most Americans would not know what the word hors d'oeuvre means?

True story:

I believe in junior year I was asleep in French class and the teacher woke me up with that word on a card shoved in my face saying, "How do you pronounce this?"

It was a word I knew well being interested in food, having traveled, yada yada yada. However, I was not being funny when I said, "Whores De Vors". The class laughed, but I was embarrassed.

I think this guy is a total dick. Just look at him. It oozes out of his pores. I don't think he's the type to fuck you over, but your use to him only goes one incident past your ability to do things for him. Just the impression I get from him.

However, I also think he knows his shit. If I ever opened a bar/restaurant, I'd take any and all advice he gives. This is pretty smart. The only part he doesn't get too much into here is that the food and service still do have to deliver. It's amazing how few people who open restaurants understand how much the experience plays into a person's satisfaction. There was a good P&T:Bullshit episode about this very thing.
