What do you do when a really hot girl who you personally know starts quoting bible verses all over her facebook page?
My first instinct is to mock her, but I thought I'd get second opinions.

Short answer - Yes.
Long answer - Yes plus. Depends on what quotes & why they're being referenced.

She recently cheated on her husband then left him then wanted him back but he didn't want her....
So I guess she was lost and Jesus found her.

I wasn't going to argue. Nothing to argue about. I was just going to fuck with her.
She mentioned the other day she had a new fave band that I never heard of.
I asked what kind of music they do.
She said Christian Rock.
I told her that I preferred my metal more on the satanic side.
She had no comment.

All kinds of good things come from arguing. But, as G said, arguing isn't the point. It's about poking people's brains in uncomfortable places & seeing what happens. Almost experimental.

Good start. You can quote Hank Hill next, "You're not making Christianity better, you're making rock and roll worse."

That is a really funny line.
